Fish Soup

Ingredients
250 gms            Fish
1 tbsp               Olive oil
1                      Onion (sliced)
1                      Tomato (sliced)
                        Salt & pepper to taste

Method

Put fish in a pan with enough water to cover. Add olive oil, onion, and tomatoes. Boil for about 25-30 minutes or until the fish is cooked. Strain through a strainer and return soup to the heat, shred fish into pieces and put it in the soup. Add some more water if required. Simmer till well done. Add salt, pepper and lemon juice to taste & serve hot with some soup buns and sticks.


Chicken Soup

Ingredients
250 gms            Chicken
1                      Onion (sliced)
1 tbsp               Olive oil
¼ cup               Rice (boiled)
                        Salt & pepper to taste

Method

Put the chicken to boil, in enough water. Add olive oil and onion. Simmer until chicken is soft. Sieve the soup through a strainer and place on a flame to boil again shred chicken add it to soup along with rice. Boil well. Add salt & pepper to taste and serve hot with some soup buns and sticks.


Eggplant Salad

Ingredients
2                      Eggplant
2 flakes             Garlic (crushed)
¼ cup               Olive oil

For garnishing
                        Parsley

Method

Put the eggplant in the microwave for about 10 minutes and cook until soft, using a spoon, remove the inside of the eggplant in a bowl. Add garlic and oil. Mix well with a fork until oil is absorbed. Put in a fridge to cool and serve garnished  with parsley along with some bread.


Greek Salad

Ingredients
4                      Tomatoes (sliced)
1                      Onion (sliced)
½                     Cucumber (sliced)
1 tbsp               Olive oil
2 cubes             Cheese (sliced)
                        Salt, pepper & oregano to taste

Method

  Combine tomatoes, onions, cucumber & cheese together in a mixing bowl. Add olive oil, salt, pepper and oregano. Mix gently and serve cold.


MeatBalls

Ingredients
500 gms            Ground meat
1                      Onion (chopped)
1                      Egg
                        Oil for frying
2 tbsp               Mint leaves (chopped)
                        Flour for dusting
                        Salt, pepper & oregano to taste

Method

 Combine meat, mint leaves, egg and onion. Season with oregano, salt & pepper. Make small size balls, roll the meatballs in flour and fry in hot oil until brown, remove and serve hot with corriander dip & salad of your choice.


Cauliflower Fritters

Ingredients
500 gms           Cauliflower
¼ cup              Gramflour
                       Oil for frying
                       Salt & pepper to taste
5-6 flakes        Garlic (minced)
1” piece          Ginger (minced)
1                     Green chilli (minced)
2-3 drops         Orange food colour
1 tbsp              Curd

Method

  Cut cauliflower into medium sized florets and cook in boiling salted water for 3-4 minutes. Drain & keep aside. Combine curd, ginger, garlic, green chilli, gram flour, salt & orange food colour in a bowl. Dip cauliflower florets into batter and marinate for about ½ an hour. 

Heat oil and fry cauliflower in hot oil until golden and crisp on all sides. Drain out excess oil and serve hot with corriander dip & salad of your choice.


Stir Fried Mushrooms

Ingredients
200 gms            Mushrooms (washed)
2                      Onion (sliced in rings)
1                      Capsicum (sliced)
2-3 flakes            Garlic (minced)
2 tbsp               Oil
2 tbsp               Lime juice
                        Salt & pepper to taste

For garnishing
                        Corriander leaves

Method

   Heat oil in a frying pan fry garlic & onions for a minute. Add mushrooms stir fry for 2-3 minutes. Add lime juice, capsicum, salt & pepper. Stir well & cook until done. when done transfer to a serving bowl garnish with corriander leaves and serve hot.


Coconut Custard

Ingredients
500 ml              Milk
2 tbsp               Custard powder
3 tbsp               Sugar
2 tbsp               Dessicated coconut
2-3                   Green cardamom (crushed)
2 tbsp               Raisins

Method

  Boil milk, dissolve custard powder in ¼ cup of water and pour it in the boiling milk, stir continuously until the milk is thick. Add sugar, dessicated coconut, green cardamoms & raisins. Stir well. remove from the flame to cool. Place in a refrigerator and serve chilled.


Macaroni Salad

Ingredients
1 cup                Macaroni
1                      Tomatoes (deseeded & diced)
1                      Capsicum (diced)
2                      Spring onion with green (chopped)
2 tbsp             Olive oil
1 tbsp               Vinegar
½ tsp                Oregano
                        Salt & pepper to taste

Method

  Boil macaroni in sufficient water along with ½ tsp of salt & 1 tbsp of oil. Drain thoroughly, wash and cool. Add tomatoes, capsicum, onion, vinegar, oregano, remaining oil, salt & pepper. Mix well & serve cold. 


Cheesy Macaroni

Ingredients
2 cups               Macaroni
2                      Tomatoes (sliced)
2 tbsp               Butter
                        Half pint milk
1 tbsp               Flour
                        Salt & pepper to taste
¼ tsp                Mustard powder
2 cups               Cheese (grated)

Method

Boil macaroni according to the instructions on the pack. Whisk flour and milk together in a bowl Melt butter in a saucepan. Add milk and flour mixture. Bring to boil, simmer for 2-3 minutes Season with salt, pepper, mustard powder and half cheese. Add macaroni and mix well. Pour mixture into a pie dish, top with layer of tomatoes and rest of cheese Put it in warm oven until cheese  turns golden in colour. When done serve hot.


Tofu Nuggets                 

Ingredients
250 gms            Tofu
1 cup                Bread crumbs
4 tbsp               Flour
                       
Water according to requirement
                        Salt & pepper to taste

¼ tsp                Red chilli powder
½ tsp                Thyme
                        Oil for frying

Method

Cut tofu into 1x1 inch square pieces. Combine flour and water & make a batter of pouring consistency. Add salt, pepper, red chilli powder & thyme stir well. Dip tofu pieces in the batter roll over breadcrumbs & deep fry in hot oil until golden and crisp. Remove and serve them hot with garlic sauce.


Chilli Pasta

Ingredients
175 gms            Pasta
1½ tbsp             Oil
1                      Capsicum (sliced)
1 tsp                 Garlic paste
                        Salt & pepper to taste
4 tbsp               Cheese (grated)
½ tsp                Oregano

Method

Boil pasta according to the instruction on the pack. Heat oil in a frying pan fry garlic add capsicum, stir fry for 2 minutes. Add pasta, cheese, salt, pepper & oregano. Stir well & cook for 2-3 minutes. Remove & serve hot.


Chicken Patty

Ingredients
250 gms            Chicken (minced)
5-6 flakes            Garlic (chopped)
1                      Onion (chopped)
1 tbsp               Parsley (chopped)
                        Black pepper powder to taste
                        Salt to taste
2                      Green chillies (chopped)
2 tbsp               Cornflour
                        Oil for frying

Method

Heat 1 tbsp of oil in a pan. Fry onion, garlic & green chillies. Add salt, pepper & chicken mince. Stir well & cook for 4-5 minutes. Remove cool and add cornflour. Knead well. shape into a patty and shallow fry in a frying pan. Serve hot with ketchup and salad of your choice.


Spicy Peas

Ingredients
2 cups               Peas (shelled)
½ cup               Onion (chopped)
1 tsp                 Cumin powder
½ tsp                Mustard powder
½ tsp                Chilli powder 
1                      Tomatoes (chopped)
2                      Green chillies (chopped)
                        Salt & pepper to taste
2 tbsp               Lemon juice

Method

Boil & cool peas. Add onion, cumin powder, mustard powder, chilli powder, tomato, green chilli, salt & pepper. Pour lemon juice, stir well & serve cold.


Chickpeas And Tomatoes

Ingredients    
2 cups               Boiled rice
1 cup                Chickpeas (boiled)
2                      Onions (chopped)
3                      Tomatoes (chopped)
4-5 flakes            Garlic (crushed)
2 tbsp               Corriander leaves
½ tsp                Thyme
                        Salt & pepper to taste
2 tbsp               Oil
4 tbsp               Cheese (grated)

Method

Heat oil in a wok fry onion & garlic until translucent. Add tomatoes, corriander leaves, thyme, salt & pepper. Cook until tomatoes are soft. Add chickpeas. Stir well and cook for 2-3 minutes. Place rice in a bowl. Spread chickpeas over it. Top with cheese & bake in hot oven until cheese turns golden in colour. When done serve hot.
