               Microwave Oven 
               Cooked Millennium Pizza 

Have a platter full of delicious pizza that flatters your taste 
beyond dream. Having originated in Naples, Italy, pizza has 
become a household dish the world over. here is how it is 
prepared in myriad forms using a microwave......... 

Egg Pizza

Ingredients for the basic pizza base (2 pizza crust) 
500 gms            Flour 
1 ½ tsp             Dry yeast 
1 tbsp               Sugar 
1 tsp                 Salt 

                       Warm water (approx 2 cups)

Method

    Mix all of the dry ingredients together. Add  water and knead into a smooth dough. Keep the dough aside for approx 1 hour and  let it rise into double Punch it down and knead again. Divide the dough  into equal big round balls. Roll into a thick circle, grease the pizza tray with plenty of oil and place the rolled out dough  in the tray. (size of the circle should be according to the size of the pizza tray).  Leave for 15  minutes.

Ingredients for the basic tomato sauce
1 kg                  Tomatoes (blanched & chopped)
3                      Onions (chopped)
6 cloves            Garlic (crushed)
3-4 tsp              Sugar
1 tsp                 Red chilli powder
4 tbsp               Olive oil
            
            Salt to taste

Method for basic tomato sauce

     Heat the oil in a frying pan, add the onion and crushed garlic and fry for 3 minutes. Add the tomatoes, sugar, chilli powder and salt, cook for 10 minutes. When done blend the mixture in a liquidizer. 

Ingredients for the topping
6                      Boiled Eggs (peeled & sliced)
2 tsp                Oregano
¼ cup              Capsicum (finely chopped)
1 tsp                Chilli flakes
cup           Mozzarella cheese (grated)

         
           
   Little butter

           
            Salt to taste

Finally

   Spread tomato sauce on a rolled out dough. Arrange egg slices and capsicum on it. Spread oregano, chilli flakes, salt and cheese. Dot with butter and bake in very hot oven at 500*F for 20 minutes or until done. Cut into pieces and serve hot.

Ham and Pepperoni Pizza

Ingredients
8 slices                        Ham
½ cup                          Tomato paste
 
½ cup                         Tomato sauce
4                                 Bread rounds or small pizza base
100 gms                       Pepperoni salami (sliced) (Pork Salami)
1 tsp                            Oregano
4 cups                          Mozzarella cheese (grated) 
1 tbsp                          Fresh Parsley

Method

    Slice ham into thin strips. Combine paste and sauce in bowl. Spread sauce mixture over bread rounds, top with ham, pepperoni, oregano and cheese. Sprinkle with parsley.

    Place pizzas on oven tray & bake in a hot oven for about 10 minutes or until pizzas are browned. When done serve hot.

Chilli - Paneer Pizza

Ingredients
1 basic recipe   Pizza dough
1 basic recipe   Tomato sauce
                       Butter to greasing

Ingredients for topping
1 cup                Fresh Paneer (cut into fine cubes)
2                      Onion (sliced)
½ cup               Capsicum (sliced)
¼ tsp                Oregano

For baking
½ cup               Mozzarella cheese
1 tbsp               Olive oil
                       Salt to taste

Method

    Roll out the pizza dough into a thick round circle and place on greased baking dish. Spread the tomato sauce over the base and fill with fresh paneer cubes, sliced onion 
& capsicum

  Season with salt  & top with the cheese and finally drizzle the olive oil over it. Bake in a preheat oven at 180*c for about 20 minutes or until the base is evenly browned. Sprinkle oregano & serve hot.

Baby Corn Pizza

Ingredients
2                      Pizza base
1 basic recipe   Tomato sauce
2 cups               Baby corn (sliced & blanched)
1½ cup             Mozzarella cheese (grated)
1 tbsp               Olive oil

Method

    Heat half the olive oil in a non-stick  pan over a low flame and place a pizza base on it. Spread half the tomato sauce over the pizza base. Place baby corns slices over the sauce. Top with half the cheese. Cover the pan with lid and cook on a very slow flame for 10 to 12 minutes or till the base is evenly browned. Use the remaining ingredients to make another pizza. Serve hot.

Smoked Salmon and Spinach Pizza

Ingredients
½ cup               Tomato sauce

4                      Bread rounds or small pizza base
1 cup                Mozzarella cheese (grated)
¼ bunch           Spinach (shredded)
100 gms           Smoked salmon pieces
1 small              Onion (sliced)
1 tsp                 Green chillies (chopped)
1 cup                Extra cheese (grated) 
¼ cup               Sour cream

Method

      Spread sauce evenly over breads, place bread on an  oven tray. Sprinkle cheese, spinach, salmon, onion and chillies over pizza base. Sprinkle with extra cheese. Bake in a moderate hot oven for about 12 minutes or until done. Top with sour cream, return to oven for about 1 minute or until cream is warm. Serve hot.

Chicken  Pizza

Ingredients for the pizza base
1½ cup             Plain flour
           
            Salt to taste
¾ cup               Milk
1½ tsp              Baking powder
2 tbsp               Butter

Method for the pizza base

Mix the flour, baking powder, salt and butter. Add the milk and knead into a  dough. Flatten or roll out the dough to 3 to 4 mm thick on a lightly greased  flat board. Fold up an edge all around and refrigerate for sometime.

Ingredients for the topping 
2 large             Garlic cloves (chopped)
2 cup               Tomato puree
2 tbsp              Jalapeno chillies 
500 gms          Cooked chicken (shredded)        
1 tbsp              Oregano
1 tbsp              Butter
1 small            Chicken cube
¾ cup             Cheddar cheese
½ cup             Soft cheese with garlic and herbs
            
           Salt to taste

Method

    Saute garlic in butter in a frying pan. Add the tomato puree and crumble in the 
chicken cube. Simmer, stirring now and then until all the liquid has evaporated. Mix in the jalapeño chillies and cool the sauce completely.

   Spread over the base and bake at 250*C for 10 minutes. Remove from the oven 
and sprinkle shredded chicken, garlic cheese and finally a thick layer of grated  
cheddar cheese.

    Season with salt and oregano and bake until the cheese has melted and the base 
seems cooked, approximately five minutes. Serve hot.

Herbal Pizza

Ingredients
2                      Pizza base
1 basic recipe   Tomato sauce

Ingredients for topping
10-12                Fresh basil leaves (roughly chopped)
1 cup                Mozzarella cheese (grated)
2 tbsp               Oil 
                       Butter for greasing

Method

      Place one pizza base on a greased baking tray. Spread half the tomato sauce on the pizza base. Sprinkle with half the basil leaves and cheese on top of the pizza.

     Drizzle with half of the olive oil and bake in a preheated oven 200*C for 20 minutes or until the base is evenly browned. Repeat with the remaining ingredients to make another pizza. Serve hot.

Mushroom Pan Pizza

Ingredients for the pizza base
2 cup                Plain flour (maida)
                        Salt to taste 
1 tsp                 Sugar
1 tbsp               Oil
2 tsp                 Fresh yeast (crumbled)

Method for  basic pizza

     Combine all the ingredients except the oil in a bowl and knead into a soft dough using enough water until it is smooth and elastic. Add the oil and knead again. Cover the dough with a wet muslin cloth and keep aside till it doubles.

    Press the dough lightly to remove the air. Divide the dough into 2 equal parts. Roll out each portion into a  big and thick circle & keep aside.

Ingredients for the tomato sauce
4 large              Tomatoes
1 small              Onions (chopped)
1 tsp                 Garlic (chopped)
¼ cup               Tomato ketchup
1 tsp                 Sugar
½ tsp                Dried oregano
2 tbsp               Oil
           
            Salt to taste

Method for tomato sauce

     Blanch the tomatoes in boiling water. Peel  and make a puree of tomatoes. Pass through a sieve to remove the seeds. Heat the oil, add the onion and garlic and  saute for a few minutes. Add the tomato pulp and allow it to simmer for 10 to 15 minutes or until the sauce reduces a little. Add the ketchup, sugar and salt and simmer for some more time, add oregano and mix well  keep aside.

Ingredients for the topping
½ cup               Spring onion (chopped)
½ cup               Mushroom (sliced)
1 cup                Mozzarella cheese (grated)  
1 tbsp               Oil for cooking

Finally

   Heat half the oil in a non-stick pan and place a pizza base on it. Spread half the tomato sauce over the pizza base. Top with half the spring onions, mushroom and cheese.

  Cover the pan with a lid and cook on a very low flame for 10 to 12 minutes or till the base is evenly browned. When done  serve hot. Similarly make another pizza with the remaining ingredients.

Capsicum - Ring Pizza

Ingredients for the basic pizza dough
2 cup              Plain flour (maida)
1 tsp               Salt 
1 tsp               Castor sugar
4 tsp               Olive Oil
                      Warm water
tsp            Fresh yeast  Or 2 tsp dry yeast

Method for  basic pizza

     Sieve the flour with the salt and sugar. Add the oil and mix well. Make a well in the center and crumble the yeast in the center. Sprinkle ½ cup of warm water over the yeast. Wait for a few minutes. Mix the yeast in the flour and add enough water to make a dough.

   Cover and leave the dough aside until it is double in size. Knead the dough for 1 minute again. Divide the dough according to the size of the pizza trays.  Make a round ball & roll into a thick circle. Grease the pizza trays with plenty of oil. Place the rolled- out dough in the tray. Leave for 15 minutes.

Ingredients for the basic tomato sauce

a few                Red chillies (coarsely powdered)

Finally

   Spread the sauce over the rolled-out dough. Arrange the capsicum rings sprinkle plenty of cheese, coarsely powdered red chillies and salt. Dot with butter. Bake in a very hot oven at 500*F for 20 minutes or until done. Cut into pieces and serve hot.

Bean Pizza

Ingredients for the dough
2 cup                Flour (maida)
1 cup                Wheat flour
4 tsp                 Oil
½ tsp                Salt
                       Oil for deep frying

Method for the dough

   Mix the flours. Add the oil and salt and make a soft dough by adding water. Roll into thin rounds with the help of plain flour. Prick lightly with a fork. Deep fry in hot oil on both sides on a medium flame until crisp.

Ingredients for the topping
1 cup               Beans (rajmah)
1                     Onion (chopped)
2 tbsp              Tomato ketchup
2 tbsp              Oil
2 tbsp              Butter
                       Salt to taste
3 ½ cup           Mozzarella cheese (grated)
few                 Olives (chopped)
1 tsp                Jalapeno chillies
6 tbsp              Hot & spicy sauce

Method for the topping

     Soak the beans overnight. Cook in pressure cooker in just enough water until done. Heat the oil and fry onion till translucent. Add the beans, tomato ketchup, butter and salt cook for 2 to 3 minutes. When cooked, mash the beans lightly.

Finally

   Put the fried rounds  on a baking tray and spread a little bean mixture on each. Spread jalapeño chillies, a little hot and spicy sauce and equal amount of grated cheese on each fried round. Garnish with olives and grill until cheese melts. Serve hot.

Channa Pizza

Ingredients
2                      Pizza base
1 basic recipe Tomato sauce
                        Butter for greasing

Ingredients for topping
½ cup               White channa (soaked overnight)
1 clove              Garlic (chopped)
1                      Green chilli (chopped)
1 large              Onion (chopped)
1 cup                Tomatoes (chopped)
1 tsp                 Corriander powder
2 tsp                 Cumin seed powder
½ tsp                Chilli powder
2 tbsp               Tomato powder
1 tbsp               Oil
1 tbsp               Butter
                        Salt to taste
1 cup                Capsicum (sliced)
1 cup                Mozzarella cheese (grated)

Method for the channa topping

    Pressure-cook the channas until done. Drain and keep aside. Heat the oil in saucepan. Add the garlic, green chilli and onion and stir for some time. Add the tomatoes, corriander powder, cumin seed powder, chilli powder and tomato puree and cook for 10-15 minutes till the oil separates.

    Add the channas and salt, mix well. Simmer for 5 to 7 minutes, adding water if required. When done keep aside.

Finally

  Place one pizza base on a greased baking tray. Spread half the channa topping on it. Top with half the capsicum and cheese. Bake in preheated oven at 200*C for about 10 to 15 minutes or until done. Serve hot with chilli flakes.
