Cheese is made of milk
Mozzarella cheese is used in pizza. It is a semi-soft cheese with a delicate clean, fresh curd taste and has low melting point and stringy texture when heated.

 i wanted to know if you cld help me out with any good western dessert recpies which can be made from Condensed milk. thank You.  

Fruit Galore 
Ing:-

Bread (sides removed)                      4 slices
Banana (chopped)                    
Apple (peeled & chopped)            1
Pineapple (chopped)                     2 slices
Cherries                                    few
Milkmaid                                   1 tin
Oil                                            for frying
Green cardamoms (seeds only)            6

Almonds (slivered)                      few

Method

    Combine banana, apple, pineapple and cherries in a bowl.  Sprinkle crushed cardamom seeds and refrigerate in a freezer for 2-3 hours. Heat oil in a pan or karahi, dip bread slices in water one by one, squeeze excess water and fill the frozen fruit mixture in the slices.

Fold on all sides and deep-fry till  golden in colour. When all the slices are done, place them in a bowl. Spread Milkmaid on top. Sprinkle almonds and place it back in refrigerator. Serve cold.

Dear Madam,

I consider myself a reasonably good cook.I have tried to make rasgulla but I am not able to make them spongy despite many trials. Could you help?

 RASGULLAS
Ingredients

           
1 cup                Paneer
           
1 tsp                 Maida
           
1½tsp               Sugar
           
2 cups of         Water
           
Few drops of            Rose water

Method

   Squeeze the water out of paneer, add maida & mash well. Divide the mixture into small balls & keep aside.  Combine sugar & water & cook till sugar dissolves. Gently place the paneer balls in the syrup & cook on low flame for 10-15 minutes. Remove, cool & add rose water.

Can you send me the recipe for Wheat Flour biscuits which the baker's make in India

WHEAT FLOUR BISCUITS
Ingredients

           
250 gms      Wheat flour
           
125 gms      Butter
           
125 gms      Castor sugar
           
1¼ tsp              Baking powder
           
1¼                    Egg
           
5 tsp (approx.)            Milk to knead the dough

Method
    
Sieve flour and baking powder together. Cream butter and sugar till light and fluffy. Beat in the egg. Add the flour to the above mixture and make the dough using a little milk. Roll out the dough on floured board approx. into ¼”thickness. Cut into rectangular biscuits (1½” x 1”) and prick each biscuit with a fork.
Place on a greased baking  tray and bake in a moderate hot oven for about 10 to 15 minutes or till golden brown in colour. Remove and cool on a wire rack  before storing

What are the preservatives used for tomato sauce? Please specify the quantities also.

Preservatives used for Tomato Sauce are Glacial acetic acid & Sodium benzoate

Tomato Sauce Recipe
Ingredients

           
1 kg                  Tomatoes
           
½ small             Onion (chopped)
           
15 gms              Ginger (chopped)
           
2 flakes             Garlic (chopped)         
           
40 gms              Sugar 
           
2 tsp                 Salt
           
½ tsp                Red chilli powder
           
1”piece             Cinnamon
           
1                      Cardamom
           
2                      Cloves
           
1                      Bay leaf
           
½ tsp                Glacial acetic acid
           
A pinch             Sodium benzoate

Method
1.      Select red & ripe tomatoes, wash and cut them into pieces. 
2.      Tie the whole spices in a muslin cloth. Cook tomatoes, onion, ginger and garlic along with the bag of whole spices till tender. When done remove the bag of spices and blend the tomatoes in the blender.
3.      Pass through a sieve. Add sugar to the  tomato puree and cook till thick. Add salt, red chilli powder and cook till done. Remove from flame, add glacial acetic acid and sodium benzoate dissolved in a little water. Fill sauce in a sterilized  bottles.
