Description

Aniseed Sauf Aromatic seeds with a licorice flavor. Often used as an after-dinner mouth freshener and in North Indian pickles.
Asafoetida Hing Dried gum resin from the root of various East Indian and Iranian plants.
Bay leaves Tej patta Used mostly in rice preparations for their fragrance.
GramFlour Besan Flour made from dried chick peas.
Black pepper Kali mirch Small, dark, unripe fruit of the pepper plant. Most people are familiar with the ground pepper, but in India peppers are often used whole.
Cardamom Elaichi Seeds of the capsular fruit of a rhizomatous Indian herb. Often called the "grain of paradise" and has medicinal properties.
Coriander Dhaniya Aromatic Eurasian herb of the parsley family. Sold as cilantro and Chinese parsley. Also sold in seed or powder form (known as curry powder).
Cumin Jeera Seed like fruit of Mediterranean herb used often in curry and chili powders. Used mainly for its digestive properties.
Curry leaf Curry patta A strong smelling leaf used primarily in South Indian curry preparations and tamarind rice. Often used to treat stomach ailments.
